Role and Responsibilities:
The Dough Maker position involves overseeing the daily bread and bakery production procedures to maintain consistency, quality, and efficiency. Working together with team members is essential for ensuring operational continuity and compliance with safety and sanitation standards.
Ensure accurate measurements by using scales when combining ingredients and following the correct mixing sequence.
Implement the necessary steps for dividing, forming, proofing, and baking bread and bakery items as outlined in the set recipes and schedules.
Comply with and implement all recipes, guidelines, and production plans effectively.
Sustain the cleanliness of workstations, mixers, utensils, and machinery.
Utilize PLUs, UPC codes, and Globalbake software to optimize the printing of recipes.
Ensure the safe and sanitary operation of bakery appliances such as mixers, chillers, and dispensers.
Ensure that all operations align with FSMA, HACCP, health guidelines, sanitation practices, and organic standards for optimum performance.
Accomplish mandatory trainings, participate in meetings, and adhere to PPE and scheduling standards.
Indispensable Expertise and Credentials:
Smoking can lead to serious health issues such as cancer, heart conditions, and respiratory problems.
Understanding of artisanal production techniques and the art of bread-making.
Sound expertise in baking ingredients, tools, and metrics.
Advanced math skills and the ability to swiftly calculate numbers.
Elementary knowledge of computers and software programs, potentially including Globalbake.
Proficiency in both communication and organization.
Ability to taste and judge the quality of goods based on their taste and attributes.
Capable of executing responsibilities solo or in a collaborative environment with minimal supervision.
Able to handle lifting objects of up to 50 pounds, standing or walking for the entire 8-hour workday, and performing tasks that necessitate bending, pushing, pulling, and reaching.
Able to work efficiently in environments with temperatures ranging from -10°F to 100°F.
Ability to commit to working shifts that rotate, covering nights, weekends, and holidays.
Preferred Qualifications:
Hands-on practice with Hobart mixers, compactors, blades, and baking apparatus.
Demonstrating a proactive nature in addressing challenges, underpinned by self-motivation and a knack for problem-solving.
Compensation and Benefits:
